milk barfi | milk powder barfi
Barfi is an Indian sweet prepared with dense milk. its alternative names are Burfi, burfee, borfee, borfi. Milk barfi is generally prepared with reduced milk or condensed milk
The milk barfi prepared by me is prepared by milk powder and is very easy to prepare in a small span of time. It is ideal for preparing at festival times and also great for gifting purposes.
Preparation time: 18-20 minutes
Milk powder: 1.25 cups
Full fat milk: 1/2 cup
Sugar: 1/3 cup
Clarified butter: 2 tbsp
Saffron strands: 8-10 nos.
1. Take a wok and heat 1.5 tbsp of clarified butter. Add milk to the wok and bring it to boil. Keep on stirring the milk until it boils.
2. Now as soon the milk begins to boil, add the milk powder, saffron strands, sugar to the wok. Keep on stirring the whole mixture. In about 10 minutes, the mixture will leave the sides of the pan and it will come together. Now add remaining 1/2 tbsp of clarified butter to the wok and mix it continuously.
3. Grease a parchment paper or foil with clarified butter and spread the mixture evenly on it. Garnish with almond silverets and keep aside the barfi to set. It will take around 2 hours to completely set.
4. After 2 hours, cut the barfi with the knife and store it in a refrigerator. Its shelf life is around 4-5 days when kept in refrigerator.
Note: CONTINUOUS STIRRING OF THE MIXTURE IS VERY IMPORTANT, OTHERWISE THE MILK POWDER WILL STICK TO THE BASE OF THE PAN CREATING A BURNT FLAVOR IN THE DISH.
