Hari Bhari macaroni
Every morning with the first sip of tea a question comes to my mind, What should I cook for my younger ones tiffin? And I am sure this is a question for every mother. Every day kids cannot carry same parantha and sabji. They are bored of the same meal. Although we used to carry only parantha sabji in our meal boxes. Well!!! time flies off and choices & preferences changes.
I always tries to prepare something new for my kiddo for the meal box so as to keep her interest intact into the tiffin box. Otherwise, she says that, ‘School pantry is better than your tiffin’. Well, we will have to keep the nutrition quotient intact in our meals. So my stress lies upon giving more of veggies in any form.
Today, I have prepared “Hara Bhara Macaroni”. Hara bhara symbolises for the vegetables I have added in it.
Macaroni – 2 cups
Tomatoes – 2 big sized
Chopped spring onions – 2 cups
Grated carrot – 1 cup
Veg mayonnaise – 1 tbsp
Black pepper powder – 1 tsp
Italian seasoning – 1 tsp
Chili flakes – 1/2 tsp
Salt – as per taste
Olive oil – 1 tbsp
Chopped coriander – 1/2 cup
Milk – 1 tbsp
- Boil the macaroni in a pan by adding 1 tsp oil and pinch of salt.
- Meanwhile, do other preparations.
- Wash the tomatoes and slit them from the top and charred them to take out their peels as shown in the pictures.
- Peel the tomatoes and chop them roughly.
- Take a non stick pan and add olive oil to it.
- Add chopped tomatoes to the heated oil. Add a pinch of salt to the tomatoes to cook them.
- Cover the lid for 5 minutes and let the tomatoes get cooked on a simmer flame.
- After 5 minutes, when the tomatoes are half cooked, then take a pav bhaji masher and mash the tomatoes in the pan.
- This will let the the juice of tomatoes to come out and the pulp will provide volume to the dish.
- Now add chopped spring onions and cook for 2-3 minutes. Add grated carrot and cook for another 5 minutes. Now add chopped coriander to it.
- Add salt, chili flakes, Italian seasonings and black pepper to the vegetables.
- Mix them properly and add mayonnaise and milk to the mixture. Cook for another 2 minutes.
- Check the macaroni. It will take around 8-10 minutes to get boiled nicely.
- To check the macaroni being done, take out a piece and cut it with the help of spoon. If it is cut nicely then the macaroni is done.
- Don’t overdo it, Otherwise it will get broken and will loose its shape.
- Drain the water and put the macaroni into a sieve to drain out excess water.
- Now wash the macaroni with cold water thoroughly and toss it with some oil.
- Add macaroni to the veggie mixture.
- Stir nicely and cook for another 4-5 minutes.
- Garnish with fresh coriander.
- Use of coriander and spring onions gives it a specific taste. Don’t cut the quantity of both.
- Use more of the springs of spring onions and lesser bulbs.
- You can also use penne pasta for the same in place of macaroni.
