Ice creams are frozen desserts. They can be made by variety of ways by adding different flavoring agents like different types of essences, syrups and fruits.
One of the most selling ice cream is the “KESAR PISTA ICE CREAM”. Kesar pista ice cream has pistachios and saffron as the major ingredients in it. It is a rich dessert and can be served as ice cream or as kulfi.

Today I am sharing the recipe of KESAR PISTA ICE CREAM which is egg free and is prepared with whipping cream.
Full fat milk: 2 cups
Malai/balai/Full fat cream: 1 cup
Saffron strands: 8-10 nos.
Unsalted pistachios: 1/2 cup
Whipped cream: 2 cup
1. Heat a pan and add milk and malai to it. Soak saffron strands in 1 tbsp of lukewarm milk. Let the milk mixture boil and when it starts boiling add the soaked saffron to it. Reduce the milk for 10 minutes and stir it continuously. Keep it aside and let it cool down completely.
2. Keep a bowl in deep freezer for 30 minutes. To the frozen bowl, add the whipping cream and beat it until it becomes fluffy and light. Add the reduced milk and chopped pistachios to the whipping cream and beat them again until the milk is completely mixed with the cream.
3. Take a clean container and pour the ice cream mixture into it. Cover with a lid and refrigerate for 6 hours.
4. Take out and serve chilled.
