Today I would be sharing a recipe with you which is very near to my heart. It can be called as the heart of Rajasthani sweets. Yes! I am talking about churma laddoos. Churma is a sweet dish and is prepared with any kind of flour like wheat, rice or bajra and is sweetened with either powdered sugar or jaggery. It is a very rich sweet dish as it is made with lots of ghee and dry fruits. It can be flavoured with cardamom powder. The laddoos can be easily preserved for 18-20 days without refrigerator. In Rajasthan, churma is generally served with dal baati. It is a rich delicacy and is also having lots of benefits.
Benefits of churma laddoo:
With the use of healthy grains like bajra or wheat, this is a powder packed food loaded with lots of protein and the use of ghee makes it an immune booster as ghee has lots of beneficial and detoxifying properties.. When given to small children this works as a power house of nutrition and boosts their growth.
Wheat flour: 2 cups
Clarified butter/ghee: 1.5 cups
Water: to knead the dough
Saffron strand: 3-4 nos
Powdered sugar: 1 cup (use as per your taste)
Chopped almonds: 1/2 cup
Cardamom powder: 2 tsp
1. Take wheat flour in a flat plate and moin it with 1/2 cup of ghee.
2. Moin the flour very precisely with your fingers. The ghee in flour should be sufficient to hold the shape as shown in the pic.
3. Now add little water and knead a tight dough. Refer to the pics for the consistency of the dough.
4. Now divide the whole dough in 3 equal parts and roll them to form a ball shape.
5. Now take one ball and with the help of rolling pin roll it like we roll a roti.
6. Heat a tawa and roast the roti from the sides carefully. With the three balls you will get three rotis which could be very thick. As the rotis are thick so roast them on a simmer flame.
7.Let the rotis cool down completely. Now break each roti into smaller pieces and grind them in a grinder.
8. The rotis should be of fine powdery consistency after grinding. If some lumps remain then strain the grinded rotis with a strainer to get more fine consistency.
9. Now heat a wok add put the roti powder into it and roast it until a nutty flavour starts coming.
10. Take it out of the flame and let it cool down to a lukewarm consistency. Now add remaining 1 cup ghee and powdered sugar to it. Add dry fruits and cardamom powder and mix it nicely.
11. Now take small portions and start preparing the laddoos with your palms.
12. Garnish with saffron strand.
13. Your churma laddoos are ready to be served.
1. Use melted ghee for kneading the dough.
2. The dough should be tight.
3. The rotis must be roasted properly.
(Alternative method: If you do not want to roast the rotis then make small balls of the dough and deep fry in desi ghee until they are completely fried. Then you can grind them to a powder in a mixer grinder. These are very much high in calories but take lesser time to get prepared.)
4. You can use powdered jaggery in place of sugar.
