Street foods are truly famous in Indian households. In India in each and every city there is one such nukkad where in every evening the street food vendors put up their stalls with the most scrumptious menus in their thelas. I must say that the food of 5 stars is failed when it comes to a comparison between the street foods and the hotel foods. Various restaurants started serving the street food menus these days in fancy styles. but I must say that street foods are delicious when they are eaten in their own desi styles.

Today I have got Chole tikiya chaat recipe for you all. The tikiya made in this recipe is a combination of boiled potatoes along with some spices and cornflour as the binding agent.

In northern parts, this recipe is known as the “Chole tikiya chaat” while in the Gujarat and Maharashtrian regions it is known by the name of “Ragda pattice”.

In this recipe, the aloo tikki is served with cooked chick peas or chole masala and coriander and sweet dip. It is then garnished with chopped onions and barik sev.WhatsApp Image 2018-09-09 at 6.07.29 PM

Ingredients:

—-For making tikki:

Boiled potatoes: 5 medium sized
Cornflour: 1 cup
Suji/semolina: 1 cup
Salt: 1. tsp
Coriander powder:1.5 tsp
Red chili powder: 1 tsp
Garam masala powder: 1 tsp
Roasted cumin powder: 1 tsp
Dry mango powder: 1 tsp
Desi ghee/clarified butter: for shallow frying

—-for making chola masala:
Chickpeas: 2 cups
Tomatoes: 3 large sized
Grated ginger: 1 tbsp
Chopped green chillies: 1 tbsp
Chopped coriander: 1/2 cup
Garam masala powder: 1 tsp
Roasted cumin powder: 1 tsp
Turmeric powder: 1/2 tsp
Coriander powder: 2 tsp
Salt: as per taste
Cinnamon powder: 1/2 tsp
Black pepper powder: 1/2 tsp
Asafoetida/hing: 1/4 tsp
Mustard seeds: 1 tsp
Cumin seeds: 1 tsp
Oil: 2 tbsp

—-For garnishing:
Green coriander chutney
Meethi chutney
Chopped onions: 1 cup
Chopped coriander: 1/2 cup
Chaat masala powder

Method:
—Preparation of aloo tikkis:
1. Peel the boiled potatoes and mash them with a pav bhaji masher. We require finely mashed potatoes without any lumps.


2. Now to the potatoes add all the ingredients listed under the aloo tikki preparation and prepare a sticky dough. With the help of your palms just mix the potato mixture very thoroughly. And put the sticky dough in the freezer for around minutes. Rubbing the dough with palms is important so as to take out the starch from boiled potatoes which gives it sticky texture when mixed with cornflour.


3. Now heat a pan and pour some clarified butter in it.
4. Take out the dough from freezer. Apply little oil in your palms and pinch small balls from the dough and prepare the tikkis from it.


5. Shallow fry the tikkis in hot ghee until they turns golden brown from both the sides. Adjust the flame accordingly. Initially keep on lower flame.

—-Preparation of Chole masala:

2. Now boil the chickpeas with 4 cups of water, haldi powder and salt.WhatsApp Image 2018-09-09 at 6.07.16 PM
3. Simmer when one whistle comes and then cook for another 3 whistles. Turn off the gas.
4. Now open the cooker and add some grated ginger and green chili to it. Also add Cinnamon powder, roasted cumin powder and black pepper powder to it. Close the lid for another 10 minutes so that the ingredients can release their flavors into the chick peas.WhatsApp Image 2018-09-09 at 6.07.16 PM(1)
5. Now heat a wok and add oil to it.
6. Splutter cumin and mustard seeds to it.WhatsApp Image 2018-09-09 at 6.07.17 PM
7. Now add tomato puree, ginger, green chili and all the other ingredients mentioned in the chole preparation.


8. Cook until the oil is released. Now add the boiled water from chickpeas to the wok and again cook the gravy for few minutes. Now pour the boiled chickpeas to the wok and let it boil for around 8 minutes.

—-Assembly of the Chole tikki chaat:
1.Take a platter and put tikki in it.

6. Chole tikki is ready to be served.

Notes:

  1. Generally people don’t add semolina in making tikkis but I added so as to give a crunch to the bite.
  2. Put the dough in freezer so as to set it for making tikkis.
  3. The amount spices can be adjusted as per your taste buds.
